Christmas dinner on the barbecue - is there any better way to cook it? Come to this class and learn all the secrets to an excellent Christmas lunch or dinner on the barbecue. We will talk barbecue cooking techniques, logistics, and how to make sure the day runs like clockwork.
After you've had a mug of mulled wine (or something soft) on arrival, our tutors Alastair and Lap will teach you everything you need to know for an excellent Christmas barbecue menu consisting of:
- Home-smoked salmon
- Grilled lobster tails
- Succulent smoked turkey
- Perfect roasted rib of beef
- Two barbecued sides
We cover the preparation and cooking of all the items above during the class. The class is mostly based around demonstration, discussion and eating. The main barbecue techniques we will cover are:
- Curing fish and cold smoking
- Brining poultry and hot smoking
- Indirect roasting; cooking by internal temperature
In case it is cold, the bar will be open.
