Wanting to grill something more interesting than bangers and drumsticks? Or do them, but better, with total mastery of fire? This is the class for you – it’ll take you from relative novice to confident barbecuer with a range of techniques at your disposal.
This class is all about direct grilling, where we light a fire and cook the food directly above. Relaxed, fun, instructive and delicious, with plenty to eat – it is a great way to learn.

The best fuel and failsafe lighting techniques
Temperature control and adapting to the British climate
The key cooking grilling technique: 2-zone cooking
Use of rubs, marinades, cooking sauces and spritzes
Barbecue safety – food hygiene and fires
Grilled fish (catch of the day – the best fish available from our fishmonger on the day of your class)
Spatchcocked quail with pomegranate molasses cooking sauce
Turkish-style adana kebab (lamb)
Grilled skirt or hanger steak
Grilled seasonal veg
The ingredients are prepared as a group. Cooking and eating arrangements depend on whether there are social distancing rules in force at the time of the class: Distancing in force / No distancing rules. Everyone cooks everything.
The barbecues we use for this class are a mixture of Kamado Joe barbecues (similar to the Big Green Egg) and Weber kettle barbecues. Contact us before booking if the barbecue model is important to you; certain barbecues may be limited on the day of the class.
